Egg Foo Yong Recipe

Egg Foo Yong or Egg Foo Young, no matter how you spell it, is the perfect no pressure supper. When I researched there are an array of explanations of where it originated to what it actually is. When my husband prepares it, I consider it a healthy gourmet meal. It is also very easy to make it keto friendly.

To be an omelet or not to be, that is a question on the internet it seems. Well, it is not an omelet to me. Here is why in my opinion, an omelet is not cooked to the point of browning as egg foo yong is and an omelet usually has milk or water added to the egg mixture. (Side note, an omelet is not just for breakfast in the Houlihan home and egg foo yong is not really for breakfast!) On to the recipe.

Egg Foo Yong Recipe:

  • 6 large or 8 small eggs
  • ½ teaspoon salt, when using ham recommend less salt
  • 1 can bean sprouts (drained very well)
  • 1 can oriental vegetables (drained very well)
  • 1 cup cooked meat
  • ⅛ teaspoon pepper
  • ½ cup onions cut up fine

Beat eggs for about one minute. Add well drained bean sprouts, cooked meat (for this Wine & Dine, Houli – my husband, the chef in this instance – is using ham), salt (just a pinch because of the ham), pepper, and onions. We have a thing about half cooked onions in the Houlihan home, so we cook them earlier till caramelized or at least thoroughly cooked. Mix all lightly together. Houli’s pan of choice is a 6” nonstick. If not using a nonstick use about a teaspoon of preferred fat. 

Then pour ½ cup of mixture into a pretty hot pan. Cook quickly until set and brown on the edges, turn over and brown the other side. Stack onto a hot plate, and keep covered until all are cooked. Traditionally, serving egg foo yong with rice and Chinese brown gravy is common. 

Chinese Brown Gravy Recipe:

  • 6 tablespoon drippings from roast beef, ham or chicken
  • 6 tablespoons flour (Keto use heavy whipping cream)
  • 2 teaspoons brown gravy sauce ( I use Better Than Bullion, flavor or choice)
  • 1 teaspoon salt and a dash of pepper
  • ½ cup cold water
  • 1 ½ cups hot water

Mix the flour and drippings in the bottom of the pan to make a roux. When making this a keto version, our host, Char Hess (who knows keto) uses heavy cream. If you have no drippings, butter is always a good choice. If using almond flour, be sure to use a finely ground version, you may need more. Add brown gravy sauce salt, pepper, and cold water. If lacking flavor adds more Better than Bullion and/or soy sauce. Work lumps out and mix thoroughly, and add hot water. Stir often while bringing to a slow boil.

If making gravy is not your thing and keto is not on your diet then I recommend a ready made version. There are a lot of choices out there. My husband’s favorite recipe recommends La Choy Brown gravy sauce, but we have not tried that version of the gravy.

Serving Up the Egg Foo Yong

Serving Egg Foo Yong is common with gravy and rice. Those items are optional so making this meal keto friendly is pretty simple. For our keto purposes, we are using almond flour in place of wheat flour. Almond flour is grainier so find a finely ground version, and it is a bit moister than wheat flour and so a bit more may be needed to thicken the gravy. It really depends on whether you like your gravy thicker or thinner. 

The rice substitute that we have been using when we are on the keto diet that really fits the bill for my husband and me is riced-cauliflower. We have used frozen, ready made, and made from scratch riced cauliflower. For our Wine and Dine, we used a frozen version that was a savory herb. Yum!!!!

This recipe is more like a guideline. Have fun and experiment to get what you and your family really like. This can be a leftover meal and add what is in the frig. Use any meat or vegetable and it does not feel like leftovers at all. Heck, why even tell your family it is leftovers!!!
